Do I really need the heat shield that covers the exhaust or is it there just to stop MYSELF from being burned, is it gonna cause any problems to my car if I remove it including the little bendy pipe thing that comes off it. it rattles

I bet if you touch it you will still get burnt. It actually prevents some heat from soaking into the engine bay.

It's unlikely to have much of an effect on engine internal temperature, at least not to that degree (pun not intended). I'd be looking closely at the state of your cooling system if I were you.

It does however have a considerable effect on intake temps, which can effect economy/throttle response etc. Heat shields are best left in place for a variety of reasons.

If it was there from factory it is there for a reason, best to leave it on.

Much like why you have harmonic.balancers on your crank pulley, pulsation dampener in your fuel system, snorkel/watercatcher for your air intake and insulated engine mountings.
