ohh ok then fair enuff must be normal..

It is. Most cars will run around half of the temp gauge as it's where you get peak engine efficiency. You can slightly lower it with a colder thermostat, oil cooler, etc but it's not really advised on a road car as you will hurt fuel economy.

5 laps of a race track, five times in a day, and that temperature gauge still reads halfway.

I watch it like a hawk

the digital Greddy meter has been handy.. Normal operating temp on My Stivo is 85 degrees. it will read Just under halfway, the cooling fan kicks in at 97 -98 degrees, and its Just (JUST!) over halfway.

the stock water temp gauge is useless for the track, you can have a 20-30deg variation in temp and it hardly moves...

For the track I usually use a full sweep greddy stepper guage but that requires installation of a temp sender to the cooling system somewhere. Much easier to get an indication of temp at a glance with the full sweep guages and the 60mm warning guages have a user-definable warning light you can configure too.

A less intrusive option is the greddy digital infometer as BKS mentioned above.
