I would use vinyl rather than plasti-dip on the roof, it is a bit more forgiving on the surface.

Take it to Toyota and get them to do a full inspection including running scan tools, etc. I wouldn't speculate until you know for sure what caused it.

Do you have an aftermarket ECU to control them? Otherwise they will be dumping tonnes of fuel in, which is not a good idea.
